You’ll need to briefly cook the mushrooms on the stove before layering on the cut pastry. Here are all of the best ingredients to use and why:
- Puff Pastry Dough: To make these in a snap this recipe uses store-bought frozen puff pastry. You’ll need 1 sheet. Thaw before rolling out.
- Egg Wash: Just 1 egg with a splash of water helps the pastry develop a golden-brown color.
- Mushrooms: Any type of white mushroom will do nicely. Feel free to use shiitake, baby bella (cremini) mushrooms or even a mix.
- Garlic, Salt, & Pepper: These add a punch of flavor.
- Fresh Herbs: A dried Italian blend seasoning is my choices here, but you could use fresh rosemary, thyme, basil, and parsley.

Prep the Mushrooms

Slice the mushrooms and place in a large skillet with 2 teaspoons of olive oil on medium heat.

Cook for 4 minutes then add the garlic and seasonings and stir together cooking for 2 more minutes.

Remove from the heat and allow the mixture to cool in a bowl.
Prep the Dough

Roll out one sheet of the pastry dough and cut into 8 rectangles.
Assemble and Bake

On an baking sheet lined with parchment paper, drizzle olive oil and place a tablespoon of mushrooms on top.

Top the mushrooms with a tablespoon of grated cheese and lay one of the cut pastries on top, sealing everything in.

Repeat these steps until all the pasty is used and brush each one with egg wash.
