Gorgeous Green Gazpacho

Tired of standing over the stove all day? Or maybe you want something fresh and healthy, but don’t want another salad. I certainly have days like that, so rather than turning to fast food try out this recipe!

This vibrant cold soup requires no cooking, very little prep, and can easily be customized to your flavor preferences!

Description

This twist on traditional Gazpacho utilizes fresh cucumbers and herbs to bring a bright and refreshing soup to the table in less than 30 minutes.

  1. Roughly chop the cucumbers, red onion, garlic, and place into a bowl together with the arugula and mint.
    Add the lemon juice and drizzle with olive oil. Season to taste with the black pepper. Mix everything together.
     
    Transfer everything to a blender and add the salt. Blend until the desired consistency is reached. You can do this in batches, if needed. Taste and re-season as desired.
     
    Serve chilled, garnish with mint leaves, olive oil and cream as desired.
