Berry Yogurt Bark

Get ready for a new snack! It’s frozen yogurt bark. It’s a mix of Greek yogurt, honey, vanilla, and a touch of salt, spread out and frozen to create a cool, refreshing treat. Dot the creamy base with any combination of fruit, sweets, nuts, or even coconut! After just a few hours in the freezer, it’s ready to be broken into pieces and enjoyed. It’s a simple snack or lightened up dessert, that’s ready to grab and go from the freezer whenever you need a sweet, refreshing bite!

INGREDIENTS & SUBSTITUTIONS

  • Yogurt: I love the tangy flavor of Greek yogurt in this recipe but you can swap out for full fat plain yogurt. Using a full fat yogurt will result in a creamy bark that is less icy. Feel free to add vanilla or start with a vanilla flavored yogurt to save time.
  • Fruit: Fresh strawberries and blueberries add a great pop of color and it’s a tasty way to get some fruit into your family’s diet. You can make this bark with other fresh fruits like mango, raspberries, pineapple, peaches or kiwi fruit. Be sure to cut bigger fruit thinly to make it easier to eat.
  • For Crunch: Add a crunchy factor with granola! You can also skip the granola and add something else crunchy like nuts, seeds, or even chocolate chips!

  1. Line a quarter sheet baking pan with wax paper and set aside.
     
    In a large mixing bowl, combine the greek yogurt, honey, vanilla, and salt; whisk until thoroughly combined.
    Transfer the yogurt mixture to the baking sheet and spread it out to an even thickness. 
    Top with cut berries, chocolate chunks, and chopped nuts.
    Add any other toppings desired!
     
    Freeze for 2 to 3 hours, or until firm.
     
    When ready to serve, remove from the freezer, and break it into pieces.
     
    Keep in the freezer.
