Ingredients and Substitutions
Traditional pesto is a blend of fresh basil, garlic, pine nuts, extra-virgin olive oil, and Parmesan cheese. With a few pulses of the food processor, it comes together in just a few steps:
NUTS: You are free to use any kind of nut here; pine nuts, walnuts, pistachios and macadamia are just some of my favorites.
BASIL: Pesto is traditionally made with basil leaves but have fun and experiment with other greens such as spinach, kale, parsley, or even carrot tops!
CHEESE: Pesto is traditionally made with parmesan cheese but feel free to leave it out or substitute for national yeast.
That’s it! It’s really simple to make, and it’s easy to vary according to the season or your mood. It will keep for a few days in an airtight container in the fridge, though its surface may start turning brown. As a result, it’s best to cover your pesto with a thin layer of plastic wrap or an extra drizzle of oil before sealing your container. This will keep it fresh and green!
